High temp heat treat

Just wondering while I am watching all these videos on YouTube and FIF on tv. It just seems like a lot of these guys that are doing the 10 series steels are way over critical for temps and approaching 1900 or high temps. I know the camera plays funny games with the color. But it just seems like a lot of these are way over the 1550 range. Wouldn't quenching at that temperature cause grain enlargement even with therm cycles?
 
No, I soak at 1900* on several steels. Then oil quench at lower. Then after a cryo treatment temper at around 500*. Much depends on the steel and what hardness your after. DM
