I'm sure this will get some pretty mixed reviews, but what sort of edge angle does an XM-18 (specifically the 3" slicer grind model) take the most benefit from? I'll be going at it with my Edge Pro Apex... so things can get pretty precise when throwing an angle finder into the mix.

Something that is lower than 21 degrees. I matched the bevel that came on mine and found that it doesn't cut very well. I would recommend 18 degrees per side. That is if your bevel doesn't get too wide on you. It's also worth mentioning that my Hinderer is a 3.5 slicer with CPM 20CV steel.

Mine is in CPM 20CV also... So 18 per side should do well for the 3" version? It currently still has the factory angle which I take to be at least 20 degrees per side.

I have a 3" slicer, a 3.5" warncliff, and a 3.5" spanto... they all appear to be very different angles.

18 degrees per side is what I will go with soon unless I decide to sell mine. It's a good compromise of a tough edge with a good slicer.
