Do you mean Henckels ? Mine are always sharpened with butcher's steel or fine diamond rod, freehand.
 
do you mean henckels maybe? I keep mine sharp on a leather strop, but most of their blades are 420, there are some carbon steel. If I rmeember correctly theirs, amny of them, are made for them by boker solingen. You can sharpen them on pretty much anything (stone, cermaic, strop, etc.).
 
No, he means Hinkels. They are an obscure type of riding spur that has a blade shaped like a pizza slicer except it doesn't rotate. They are a ***** to sharpen! These are where the common expression - "to face your Hinkels out" comes from. It means you've overcome the need for excessive force.
