Hog roast, my knives in Action!

My company hosted an "open house" and I was "asked" to help cut the meat. I don't get the chance to put my knives through a REAL test, cutting meat like this, so I made these 2 knives for the occasion. They were not pretty knives, but made for function! The meat was to be cut into hand size pieces off the bones, so another man could chop the meat up to make pork sandwiches. I had the knives sharp like razors and I purposely did not re-sharpen them or "steel" them during the whole process of boning out all 3 hogs. By the time we finished, yes they were slightly dull, but still cutting fine. The 12" long size worked great to cut completely across the hind quarters in one stroke. I was very pleased with the way the knives preformed. Other men who used them also made positive comments on their sharpness. I used 1080 steel on both, 1/8" thick. Before everyone jumps up and tries to buy these two knives. let me say this, I sold them both at the last gun show I did. But I believe there are more where these came from. Another great benefit as the meat cutter, we all got "first taste" on the meat! Had to make sure it was OK for the public, ya know! Never had BBQ like that!!
