Got talked into making a honesuki (Japanese poultry knife)....glad I did actually as it was a fun project.
Knife is made from 52100 HT'd to 61 HRC. Very asymmetrically ground with a slight convex on the bevel side. Back is all but flat.
Handle is made from black linen micarta with thin, dark red liners.
