Hoping someone can help.

For Christmas I was hoping to make everything myself, besides toys. I wanted to male my sisters some new cutting boards and pair them with a nice knife. Though I have never made a knife, I am up for a challenge. The things I don't know is type of steel. I will be stock removing this and using minimal tools. I have a bench grinder and an angle grinder. I also don't have a kiln (if that's the right item) to heat these after. Or maybe I don't need to harden or could use my oven. I don't want to send it away to do this, as time is running out and I have a small budget. If these knifes become more novelty, them practical that is fine. But this looks like am interesting hobby that could blossom and these be my starters.
 
You can try either a saw blade or some old knife/machete as a material for your blade, then you will not have to bother with heat treat.
