Has anyone tried this leather for sheath or holster? My only experience with the material are from leather boots which proved to be highly durable. i might be able to get in in 9-10oz.

Chrome tanned leather is more rust-prone for the knife IIRC. I haven't done work with leather in a while but I'm pretty sure you want veg-tanned leather.
