Hot chocolate reccomendatiosn - recipes

Let's hear em!

I'm looking at going gourmet hot chocolate this fall. Do you have a favorite?
 
I use any old packaged hot chocolate but I add a small piece (maybe .5 inches square) of dark chocolate to the mix. It makes all the difference in the world.
 
This ones pretty good.

Hot chocolate

1/4 cup cocoa powder
4 cups milk
1 cup semisweet chocolate chips
1 tablespoon vanilla

over medium heat, combine first two, then add the next. whisk a lot until melted. When it starts to boil, off heat, add 1 tablespoon vanilla, pinch of salt. I also like to add some creamer to it for some added richness.

I've been trying to find my mom's recipe where you scalded the milk, added cocao and sweetener and a touch of salt. When it foamed up and was ready to boil over, you poured in a can of evaporated milk. It was awesome but I can't find the recipe.
 
Try a good cocoa like Scharffen Berger natural cocoa powder [ it's not Dutch process] .Use honey of your choice [adds whatever flavor you want]. Some add vanilla or cinnamin.To make it fancy add a dollop of whipped cream on top then grate dark chocolate on top !
 
Ibarra Mexican style hot chocolate, probably available on the Hispanic food aisle of your store, I haven’t seen it as a powder, around here it comes in pucks, chop up and add to hot milk. Stephens (www.stephensgourmet.com) if it’s available where you are is good the orange cream reminds me of the milk chocolate orange I got as a kid around the holidays. The milk chocolate, dark chocolate, and French vanilla are also good. Another way to dress up plain old packaged hot chocolate is Kalahua and/or mint schnaps, brandy or amaretto isn’t too bad either. One thing I have noticed is that what ever you use, if it calls for milk it’s better if you scald the milk.

Phatch, that sounds like my mom’s recipe, but I don’t remember evaporated milk, I’ll see if I can find anything out.

I buy the cheap stuff. BUT, I add half as much powdered milk to it as I do cocoa powder, and make it into a slurry with a quarter of the mug with real milk. Add a spoon full of frosting, peanut butter, caramel sauce or jam/preserves (depending on what I've got a craving for). Fill the mug to the half way point with boiling water and blend until smooth, then add the rest of the water.
 
I seconds the Ibarra Mexican style hot chocolate, quick, easy, tastes great.... hmmm it's 10pm here, just got me thinkin'..........................
