hot sauce content - anyone know a less salty *hot* hot sauce?

just got my supersix set from blairs hotsauce (extremefoods.com). they were having a buy one get one free on the supersix, so i bought 2 and gave one to my freinds dad who likes spicy foods. overall, im impressed (ive had the sudden death, possible side effects, and mega death for a while now, as well as all of the heat series from blair for a while, but never had any of his original hot sauces), but one thing stands out to me on all of these - they are very salty.

all of wich have a 1tsp serving size, and they have all have 120mg's of sodium except for the jalepeno death wich has 55mg's. i honestly dont know if thats a lot (i assume it is since i use a lot more then 1tsp per food item). but the taste certainly does show through.

so, just wondering, anyone know of a *hot* (400,000Q or higher (the symbol for scoville looks a lot like a Q :rolleyes: )) hot sauces that are less salty?

one of the things that i like about blairs hotsauces is that the taste of the pepper really shines through. after having had a fair bit of the sudden death and possible side effects, i decided at one point to eat a raw orange habenero, and was very suprised to find that it tasted exactly like the hot sauces. quite tasty to be honest... like running 4 miles in 10 minutes :D - shaky legs and arms, quickened breath, the sweats, massive endorphin rush, liquified stomach... good times....`

I don't know, it might lead to a gadget-related discussion ... such as which is the best stomach pump, or what to do when your toilet explodes.
 
wich is why i said 400,000 plus, anything less isnt a hot hotsauce.

keep in mindthat thats my second bottle sudden death, and take the mega deat/possible side effects plain about once a week just to get kicks - megadeath being about 1-1.2 million.

blair is actually making a purer version of the 6am reserve, gonna be truly pure capsicum crystals (possibly suspended in oil, basically however he can package them an maintain their heat/flavor/general integrity), wich will be a consistent 16,000,000 scoville units, literally as hot as you can go...


lol, sorry about that, i was way off on the megadeath, wich is actually around 550,000....

even if they dont, thanks for the link anyways :)
 
I can't help you on the sauce question, but that second pic you posted looks like something from an old Gumby animation piece, if Gumby kicked @ss and collected skulls--great pic! :)

I like the Sudden Death. Never noticed the saltiness. Too hot for me to notice.

This thread inspired me to order some hot stuff. Today I got my bottle of Sudden Death, and a bottle of 2 a.m. Reserve. This is seriously some hot stuff. I dipped a toothpick into the 2 a.m. Reserve, and tatsed it straight, I feel alive alright! I guess anything that comes with a warning to avoid skin contact must be pretty strong. :cool:

Who else here would be willing to try a bit of this stuff straight up?? Honstly though it isn't as bad as I thought it would be. These sauces taste much better than Tabsco or standard hot sauce. Seems like there is more than just heat in there to me anyway.

Now, to find something I can spice up with these :D :cool: .

just ordered the sampler pack of sexabi (threesome weekend) :rolleyes:

one of the things about the heat on these is that its a very natural heat, one that takes about 5-8 minutes to really kick in, and then lasts full bore for about 10 minutes, and tapers off for about 30 minutes. wich is basically how eating a straight habenero is, wich is unerstandable since a lot of these are basicaly puree'd peppers (some with pepper resin added). the heat series of hot sauces, specifically the jalepeno tequila and the chipotle slam are incredibly tasty... the one problem is that i go through them in only a couple of days, using about 4 table spoons per dish.

did the 2am have a taste?

the difference between possible side effects and mega death is pretty big, the possible side effects actually tasting like a hotsauce, and the megadeath having a midly sweet flavor, backed by the punch of a straight fresh habenero.


i guess one of the reasons i notice the saltiness of these more is because of how mild they are heat wise. where as with the sudden death is pretty much a drop per forkful, enough to get the flavor, but not kill yourself over the span of the entire dish, where as with these i basically smother everything...
 
Yeah the 2a.m. had a taste. To me it seemed to taste slightly smokey actually. Taking a drop staright up and it had simiar effects to drinking a shot real fast. Really cool stuf actually.

I mixed some of the Sudden Death in with Cheese Wiz to make the best nacho cheese I have ever tasted. Nice and spicy, but real tasty too not just hot. I am thinking I might want to try more of his sauces, but not sure which ones yet. How would you rate the six of them, in terms of heat and flavor, as well as how much you would use on a dish?
 
personally, i only consider a few of blairs sauces. everything else for me is iether to far in one direction of extremes or to much of an inbetween.

of the main line of sauces, for me,
the japeno, the original death, and the possible side effects are the only ones i really ever use. i use sudden death every now and again, but its hot enough that im probably gonna want soemthing that kicks me in the teath more the something that tastes extremely good (wich possible side effects does.)

the jalepeno is one that i use a boat load of whenever im eating soemthign that goes good with it. similarly to how i eat a packet of ketchup per potato wedge (or more), i will put about a tsp on each mouthfull of food, wich means (As is the case with the shipment i recently got) i finish off the bottle within 2 weeks :(

the original death is just a classic hot sauce. not hot enough that you have to stop halfway through your meal to let it subside, but has a classic hot sauces flavor. while id use a little less of it then the jalepeno, its still pretty much the same thing, put some on every forkfull.

the posible side effects is basicaly eating straight freshed puree'd habenero's, and as such it tastes pretty much identical to habenero's. this is a small drop every other fork full (if that) because the heat carries over into the half hour+ mark. anything more then on every other forkful basically means i wont be tasting my food. great stuff...

the rest of the sauces between original death and possible side effects are just variing degree's of flavor and heat. they are all good, but the jalepeno, orignal death, and posible side effects are the real stand outs (to me). mega death is there for hurting your freinds :cool:

of his heat line, i found the wasabi ginger and the mango pretty much unedible :( ... the wasabi ginger was a way to smooth and creamy, with 0 heat from what im used to (i like straight wasabi, and straight habenero's, this had niether side of the heat styles). if you love ginger and wasabi, it might be for you.

and the mango was, well, pureed mango. not my cup of tea.

the chipotle slam and the japeneo and tequila on the other hand were UNBELEIVABLY good. to the point that you'll have to buy 3 each every time you get them, otherwise you'll be buying one a week (cost a lot in shipping). i finished off about a bottle a week for 4 bottles, and they decided i shouldnt be spending so much on hot sauces.

chipotle slam is a more vinigary style of the orginal death, with a more tangy flavor (helped by the vinigar), and the jalepeno tequila is, literaly, puree'd (and minced) jelepeno's in a jar :D:D:D. i guess when i said that i wanted a less salty form of the regualr blair sauces, these really do fit the bill. i guess i wanted something a little more compacted and concentrated, you know, something i wouldnt guzzle straight out of the bottle (people always stare at you when you do that :( )

im going to have the 3 sexabi sauces soon (hopefully in the next few days) so i'll get to see how those compare...
 
one more note on the hotter of the blairs products, i was making some barley soup (just now) that turned out rather blah because i didnt have enough vegetable broth mix to completely saturate the 6 cups of water, so i added a boulion cube and 7 drops of megadeath (total mass of the soup is about 8 cups).

completely changed the entire dynamics of the soup, the salt from the boulion cube brought out the flavors and covered some of the lackluster textures (mostly barley (didnt have enough mushrooms iether :( ), and the small amount of megadeath (about 1/2 tsp) made the soup hot enough that my mother couldnt eat it (she's rather sensetive to hot foods, straight tabasco would send her running around the house looking for something to cool hour mouth down).

and it adds the right kind of heat, the kind that sinks in after about a minute or two of eating, and because its more heat then it is flavor, it didnt change the overal flavor of the soup at all, just added heat.
 
I like homebrown chilli oil - it has almost no taste (which is what i like, i want the hot feeling of my regular food without the stench or taste of the sauce), here's is obviously no salt and it is hot as hell :) I'm not sure how mommakes it but it certainly involves cooking ground chilli in oil ...

I saw a show on the food channel about Hot peppers . If you burn have whipped cream nearby and put the fire out with that :) You just squirt it in your mouth. Not rubbed all over your body

make your own, i used white vinegar habenaros and salt, you want less sodium use less or no salt. grind up the pepers in the vinegar in a food processer and put in bottles I made about 64 oz and have a little left after 3 years of use. Its charecter has changfed over the past 3 years but every stage has been good.
 
huh... the sexabi isnt really a hot sauce, its much much more akin to sweet and sour sauce.

as a hot sauce, it leaves something lacking... way to sugary, not hot enough, very little to no pepper taste, but as a sweet and sour sauce its great. the xxl is below the heat of sudden death by a fair margin, and the medium is below tabasco and the regular original death. mild is just plain old sweet and sour sauce.
