kitchen knives?

Am I alone in wishing I could get a hold of some sweet Infi goodness in my block?

8” chef’s, a santuko and maybe a couple pairing blades with hand shaped NF handles?

I just saw Tops released a couple of S35V kitchen knives and it got me thinking...
 
There are a few out there, I have never seen one on exchange though .
 
Yeah I’ve seen the cleavers, want one! And the steak knives but was hoping for something a bit more day to day use...
 
There's one called the NICK and/or Thin NICK. Search David Browns Photos from around Thanksgiving time. He has a couple I know. Only one I've ever seen on the X is his now though, very rare!
 
More so than dedicated kitchen knife I'd like to see a thin bendable busse kin fillet knife. Fillet knife I probably get more use out of then anything else, besides folding edc/multitool. THERE NEEDS TO BE A BUSSE FOLDER. :mad:I DON'T CARE WHAT IT COSTS I'LL PAY IT.

My Scrapmax 460 makes for a pretty keen slicer/filet knife
 
The latest INFI Mountainmandu makes the perfect kitchen knife. It actually looks like a cross between a cleaver and a butcher/carving knife. Very wide and thin blade.

Good call, Dennis! The INFI MMD is an excellent kitchen knife! Slicey as all get out but tough as hell! That's it, it's settled - time to introduce the Mrs. to Busse!
 
I am serious, it carves really well.
I'm serious too. Well, except for the part about introducing my wife to Busse. I have an MMD INFI that I got from Markus and it is super slicey and not that much bigger than my large Gyuto. I just don't know how to sneak it on to the block without the Mrs. noticing.
