Check out your local fishing hot spot. If there is a lake, stream, river etc. nearby where people fish, you could probably ask nicely and learn first hand from someone.

These were my instructions for gutting a deer, works for fish too.

Cut the belly open and take out all of the stuff that you don't see in the market. If it looks like meat, it is.

If it fits on the BBQ, we cook them whole. Remove the guts and gills, scale with a spoon (underwater) and cook away. You don't really need a fillet knife to fillet, but you do need one to skin the fillets. Lots of folks scale the fillets and leave the skin on.

Try this for BBQ fish...
Take 1/2 cup or so of good olive oil. Add chopped garlic and parsley, don't be shy. Salt the fish, put on the grill. Usually takes 2 to flip it. When it is done and on the platter pour the garlic/parsley/oil over it. The heat from the fish will release the flavors in the oil mix.
Yummy :D

My brother used to clean trout at a hatchery for 25 cents a fish plus tips. He had a nail sticking out of a board that he would slap the head of the fish onto leaving it hanging. One cut across the thoat and one down the belly, strip out the guts and gills and give it a rinse. The whole procedure took about 10 seconds per fish. It was good money for a 12 year old! Mac

The fish I filet I don't gut, just skin and filet ( catfish). Bass I don't even skin, just cut filet from body and then flip and cut from skin, 2 cuts and filets are ready.

And get a good comfey couch while you're at it.
