This is more dependent on the style of knife, I have seen them that were far more thin and acute than many steel knives.The edge on ceramic is often too obtuse to be really sharp, as a way of preventing some chipping.

It can get very sharp, shaving easily, push cut fine paper, etc. .In other words it takes a crappy edge and keeps it.
