How do i cook a Bear cube steak? HELP!

Hey all, I just got some bear sausage and cubesteaks from a new friend of mine. :D I have never cooked bear before. What is the best way to cook and prepare this meat to make it most tender. How long to cook, marinade and so on... Any help would be greatly appreciated,

Don't overcook it (too tough), but certainly don't eat it bloody rare . . . bears are typically chock full of tapeworm cysts. :eek:

Some folks recommend soaking the meat in water prior to cooking to help tenderize it, or even par boiling prior to grilling. Soaking in a good quality marinade for several days might be a good idea . . . possibly one made with apple cider vinegar, which will help to break it down.

Spend an hour or two Googling for recipes and grilling tips.
 
Will do , thnks for the info. Its frozen now, so im gonna make sure i know what im doin before i thaw it out. Right now i know i atleast have to marinade it for 24 hours or more. Now i gonna figure out the best way to cook it nice n' tender.
 
I would think with it being cubed it would be as tender as you need it, so I would cook it like any cube steak flour it and fry it.That said I have never ate bear but it does work with venison.

Bears are ominvores and are very subject to having Trichinosis-Trichina worms. Always cook bear to well done.
 
Do you have a side fire chamber BBQ/ Smoker?

SLOW cook for a few hours with smoke and heat between 200-250. mmmm
 
Here's another vote for any recipe that ends with "well done". Thank that original advice poster later. If you wind up in the hospital with Trichinosis you'll be an unhappy camper. If you do get sick (fever, diarrhea, headache, others...) a couple of days later, be sure to tell the doctor you ate bear meat.

Ignore anyone telling you freezing the meat will render it safe... doesn't work for bear meat. Also ignore anyone telling you they've eaten bear medium or rare their whole lives with no ill effects. Be sure to heat to 150deg F when cooking. Not trying to scare you. It's safe if you just cook it thoroughly.
