How do I date a Schrade Old Timer and Uncle Henry?

I've been able to determine a date range that certain models were made. Some of those ranges seem to be too long to actually date the knife. Does the exact year matter or is it just based on model? The reason I ask is because I have a few that got separated from their box and paperwork. I want to ensure they go back in the correct box, but I'm not sure how to tell the year on the knife.

You are correct, good thing they had their name on them.

I did review that forum topic. Most of the links aren't working (404 error). I'm guessing either I don't have access or the age of the post has left old links behind. From the ones I could access I managed to get some between 19XX - 200X. Big jumps. I might be asking a crazy question as I've looked these over very close and don't see anything different on them.

Long production run, or not so long can be difficult if not impossible to date to a specific year.
Examples:
1) The 858 "Lumberjack" stockman was only made from 1978 to 1984 (by Schrade USA. Taylor-Schrade & BTI-Schrade have had it in production since c.2005). Some (US made) with and some without "OT" following the "858" on the tang stamp. I don't know of any confirmed source for when the "OT" was added ... or deleted.
2) The 8OT "Senior" stockman was made from c.1961 to 2004.
Those made by Schrade are unchanged from the first to the last.
(Those made concurrently by Camillus (I don't know what years Camillus also made them) have one difference from the Schrade made: Pinned construction instead of Swindon keys.)
No way I know of to narrow down to a specific year, other than a "last days" (2004) knife MAY have a mix of carbon steel and stainless steel blades, and a "last days" knife MIGHT be of slightly lower over-all quality insofar as fit and finish is concerned..

If you can post pictures of the models and their tang stamps, we should be able to help. This should help with the boxes.
