How do I know what angle to sharpen my blades?

I use a spyderco system. It provides a 30% and 40% angle. I've made a practice of using 30%'s and I guess the results are not unacceptable, but nothing I'd write home about. However, today I used the system at 30%'s to sharpen my Mikov lever action. Now I have read that the steel on the Mikovs is nothing to write home about. But........................ this time I really think I made it hair popping sharp. I don't believe in dumb luck. Any ideas of what may have happened? Thanks
 
Just a guess...but it may be that the "Mikovs nothing to write home about" material is softer than the other knives you were trying to sharpen. If that is the case, you can remove metal at an increased rate thus removing all metal up to and including the edge faster than what you though was needed for the other material. Meaning you actually sharpened the Mikovs, but have not fully sharpened the other knives you are working on. Again this is just a guess.

I just got my son a hand held magnifying device for Christmas. I decided to look at a blade I had just sharpened with my waterstones (still learning). Well I was able to see why they were not getting as sharp as my Paper wheels. I had not "removed" all the mini chips and wear out of the blade. I went back grits, until all were gone, then went back up grits and my blade was sharp.
