How do I stabilize wood?

I have a few blocks of some VERY nice curley maple, etc. and would like to make it fit for a custom fixed blade. One thing of highest priority is that the reflection/depth of the grain show up as much as possible. The best looking piece of tree turned into a rifle stock was the first one that a smith's girlfriend did. After the sanding, wood grain filler was used, then sanded, then finished w/polyurathane if I remember correctly.

Any suggestions?

Sorry about that. I think I got in a hurry and clicked the wrong forum.
Anyhow, most of the blocks that I have are well seasoned (bone dry). Would it be beneficial to "stabilize" it, of will a couple of light coats of polyurathane be just as good?
