How do you learn to put a new edge on an existing edge?

If I want to put a convex on a dual bevel knife do I grind a flat grind to remove the previous edge geometry?

What is your philosophy in putting a flat grind then adding the blade geometry to how you want it to.
 
If I want a small cutting bevel I use a 5 degree jig on my.belt sander. I go to the edge then I put the angle on that I will be using. So you have 2 bevel. Like a small scandi grind and micro bevel.

You can start by doing a flat grind right over the secondary bevel.

Yes. I grind the secondary to the edge. Then sharpen the primary. You can use the platen to get it flat. Using the belt without the platen will give it a rounded shape. I've done both. Didn't seem to notice any difference in performance. But I'm no scientist.
 
Probably depends on what you are doing with the knife. I didn't notice much of a difference in general but for bushcrafting, I don't like V edges very much.
