How do you polish a knife?

Hey I have been considering polishing some knives for awhile now but i cant find any information on how to polish blades. Do I simply apply a paste to a cloth and rub a blade for an hour or two?
I would like to put mirror like finish on some of my knives because it is more aesthetically appealing and increases rust resistance.
 
Hand polishing is a tedious (and dangerous) job.
What you do depends on the finish on the blade. My suggestion is to sand it with wet/dry automotive paper up to at least 2000 grit, and then polish with Simichrome polish on a cloth.
