How does micarta hold up?

I'm thinking of trying to trade one of my CRK's for a small micarta 21. I plan on doing food prep, cleaning fish, and general edc tasks which may gunk up the inlays. Are the inlays easy to clean and maintain? More to the point, will the micarta retain bacteria from cleaning fish due to the nature of the material? Thanks
 
The inlays are completely bulletproof, and develop a smooth surface over time that's very easy to clean. I wouldn't worry about it, but if you are really concerned about food particles getting lodged, stick with your plain Jane sebe. The crack around the inlay is more likely to harbour infection than the Micarta itself. Its not as porous as it looks in photos.
 
^I agree. You might want to clean around the inlays with a toothbrush. I got mine pretty gunked up skinning a deer this year.
