How does s110v compare with stellite/talonite?

The cobalts are more brittle, I guess? Can't find any direct comparisons in the forums.

Which would be better for a small (3-4") field knife?

I have a talonite knife, and two S110V knives including a full hardness Phil Wilson Custom. For my uses I would take the S110V steel every time. The low hardness isn't something I cant get used to, and I can get better edges with S110V. S110V, when done well as the Phil Wilson knife is about as good a steel as can be found for very wear resistant cutting and slicing blades. I'd suggest that it's at it's best doing jobs that tax other blades like Moose, Bears, Caribou, and Boars. It will deal with that thich skin and fur, and all the gritty, muddy stuff in it. I would suggest something else for splitting pelvises, and stuff like that nos so much as the steel, but the design of the knife is more suited to processing animals without sharpening.

The Talonite? I have read a lot about it but I haven't really found a use for it.
