I am getting a large size fixed blade in s125v @63/64 HRC. I don’t know anything about this steel. What should I expect? How does it compare to others?

It has the highest edge retention among stainless steels, but the lowest toughness. Not sure it's the best for a large fixed blade, which tend to prioritize toughness, but that of course depends on what you are using it for.

I’ve got a couple of Big Chris knives with S125V. I only use them for dressing game. Expect good edge retention, not bad to sharpen or touch up. I haven’t any corrosion issues. Don’t expect it to be tough, it will chip with too much lateral stress. I haven’t seen chipping hitting bone from push cutting hitting bone. But that’s subject to change at any point. I wouldn’t go digging up bulbs or gardening with S125V.

Tried it in a folder. The edge holding was not impressive so I sold it. It could have been a sharpening issue but I wasn’t willing to retool my sharpening for that one knife.

I have it in my Biryukov #12. Sharpest out of the knife I've ever owned. Terrifyingly sharp. In 6 months of ownership it is still stupid sharp, so edge retention is good, though its in the rotation so not consistent use. Zipped through a 65" TV box no problem though.
