I think I once heard Uncle once say that they could do 2 a day. 
But that is with electricity and all the bells and whistles working. This is back when they were talking about electrical problems. Search for 'electricity, electrical...etc.' and see what you get. I will give it a shot.

There are a lot of variables. Kumar used to make more khukuris than anybody but he worked a very long day and used 3 apprentices. Bura almost never uses an apprentice and takes his time and also takes time to fight with his wife who lives right above the shop so his production is quite low. Sanu is somewhere in the middle.
