Take for example any ZT model. When you get the knife brand new, if the blade is centered when you first get it, is the blade suppose to stay centered for long periods of time or it just depends on how often you use the knife? Also is it expected for a blade to go off line a hair or two?

The blade should stay centered forever. If it doesn't there is most likely a pivot tension issue which should be easily adjusted.

My PM2 came centered but is now slightly off center. When I first got the knife I played around with the pivot screws to loosen up the blade which was too tight. I must have throw the blade off a little.

Forever? I certainly wasn't expecting that answer. Does that go for all knives?

Your question was "How long should a blade stay centered? " not "How long does the average $6 knife's blade stay centered?" Because the answer to that question would be "It was centered?"

A properly built knife will stay centered indefinitely sans abuse. RevDevil, as well as others I'm sure, have posted pretty straight forward methods of centering a knife that isn't.
