how many Japanese knife manufacturers?

Hattori. I've been eyeing the Ebony 300 for a while, one day I'll pull the trigger on it.

Mmmh, in the kitchen knife department I could name more japanese manufactures than western, especially when it comes to absolute supreme quality. I would recommend the www.bladegallery.com kitchen knife cataloge. In particular:
Shigafusa
Hattori
Ryusen
Hon Kasumi
Masahiro
Shun
Fujitora
Kyocera
Global
This represents somewhat of a decending order of quality which I am not willing to defend ;) . However, Zwilling, Wuesthof...etc. I would rate below any of the ones above. Especially with Shun upwards it really takes off, IMHO (unfortunately price wise, too). Btw. Hattori is heir to the Mashiro empire and apparently decided to lauch his own line of knives focussing on the the absolute top of the line. His Cowry X/ damascus blades for which he is famous go for a pretty mind-boogling price.

There's Kai, who owns Kershaw.

Al Mar and Spyderco, who has many of their knives made in Japan.
