how much quenchant?

in messing around with a chunk of rebar, i dunked it in the coffee can of quench i was going to use fof blades... well, obviously i need more capacity, that stuff went over 200 degrees in a few seconds.
so,,, how much quenchant do you use? a gallon? two?

I have two mortar cans filled with 4 gallons each. I HT two blades at a time. One blade per tank.

I quenched my first knife (1095 steel) in one gallon of air-temperature brine. It fizzled for about a second, then went quiet, and when I took the blade out it was cool to the touch.

I don't know all that much about what I'm doing, but it seemed like enough quenchant for the knife.
