How sharp does your knife have to be?

How sharp does your knife have to be? Do you need your edc knives shaving sharp or cleanly cut paper? I say why not with knife sharpeners like the edgepro, sharp maker, and all the other sharpening systems, free hand if your good at it. I'm no pro at sharpening but with an edgepro apex and sharp maker a tend to a fairly okay to good job at it for a newbie. All the different post I've read really help, all you have to do is listen to what other people are saying. Thank you all for your advice it does help.
 
My PM2 is hanging hair sharp. I love it. All the way until today, it cost me 10 stitches when I very easily, accidentally shoved it through my finger, and out the other side. This happened like nothing. Lol. I got careless, and boom.
 
You know those tests where people say a knife is sharp and they proceed to cleanly cut paper, I like doing that with thick cardboard. It's also the most practical test for me as that's what my knives do the vast majority of the time. I still have a long way to go in my knife sharpening skill, I've only just begun to take it more seriously.

Though strangely enough it didn't take me long to have what I considered dull now is what I used to consider sharp before I got into sharpening my knives. I have had knives which will cleanly cut printer paper and be considered very sharp by majority of the population and I already feel the need to resharpen it.
 
Cut newsprint easily and perhaps over come wrinkles. This level of sharp will push cut arm hair as well, all from a 320 grit Norton fine India stone and if you like add some stropping. DM
 
I use my knives quite a bit around the farm so I don't always go for a polished pure razor edge but I like it to cleanly shave arm hair and cleanly slice paper. I don't like having to use a knife like a saw when Im cleaning game or opening feed sacks.
 
All of my knives will cleanly cut paper, wax paper, saran wrap, vegetables (any proteins), cardboard, hair etc

I may be a bit obsessed, of course any knife slices through phone book paper, mine has to slice it in silence (which takes an extreme sharp edge).

My kitchen knives are a bit beyond that and will cut rolled wax paper without sliding off the wax. Usually followed by a giggle.
 
If you act a fool with HwangJino's knives, you will pay dearly. I have seen his posted vids and pics. Best policy....no touchy.

I'd really like to touch your edges. (Ok, that sounds really weird :p) Even if it does split my skin instantly, I think that would offer me a better level of understanding of the edge characteristics. I've sacrificed my finger pads many times, and I'd gladly do it again :)

ETA: I guess I should answer the OP's question if I'm posting in his thread! I like to start the day with a knife that will at least whittle free hanging hair. I use my knives once or twice a day, so I never have to deal with my edges getting too dull throughout the day :D
 
My edges slice paper but I never really test on arm hair. When I see it slice paper the last thing I want to do is put it on my skin. When I do try I shave of some hair bit I rarely get bald spots like I see people do in videos, my arm hair is kinda thin and blondish though... Idk.

I usually finish between 3k-6k but if I need a little more bite I will stop at 1k.

I've been using my 10k after my 1k recently and liking the results. It's polished with some bite so it can still cut fiberous materials easily.

My favorite probably comes from a King 1k though.
 
I agree king 1000 give very aggressive bite. 10,000 will make for Super smooth cuts!

All of my food cutting knives are high polish, as I love that 'cutting through air' feel. Little resistance makes work go by quicker
 
I just finished my old buck 110 on a Chinese 12k I use to hone my razors. It's stupid sharp now! I like all my knives to whittle hair. There's really no need for them to be THAT sharp but I say why not? If you have the ability to do it.........then do it :)
