we all know Rowen's HT of 1095 makes it awesome, but how awesome? i mean how much can i get away with. i like to sharpen my knives to where they slice good and make people go "wow" when i let them handle them, but at the same time, i want an edge that can handle being smacked into dried wood pretty hard w/o too much concern of rolling, chipping, etc.

please tell me what's the most acute angle y'all feel comfortable putting on your ESEE's.

btw - i'm about to get busy sharpening my Junglas, so i'm anxiously awaiting some input :D
 
Not sure how clearly this shows it but I convexed my Junglas to about the same edge as my axes, which is fairly thin, and considerably thinner than the standard edge. Works great on hardwoods but if you hit any rocks (or old barrels out in the grove) it will put dings in this thin of an edge.

Just picked up an ESEE 3 and the paperwork that came with it says recommended sharpening angle is 20 deg.

i'm assuming that 20* per side, correct? 40* inclusive?

Rocketbomb - i would love to put a convex edge on my Junglas, if i wasn't so addicted to my EdgePro.
 
I am re-doing all mine to 15 degrees per side...30 degrees inclusive. It is going very well and I am very pleased. The ESEE/Rowan 1095 steel can handle that level of acuteness easily. If you get into a jam, strike a quite microbevel on there and move on. Because of that, I think the 30 degree will also be easier to maintain in the field...you do a 35 or 40 inclusive microbevel with easy...just a few strokes on a Duofold or a ceramic really.

I probably would not change the factory angle on the big ones. I am re-doing my HEST, my 3s and my 4s. I don't think I'll be re-doing my 5.

Going down to 30 degrees inclusive (or 15 a side) will be no sweat for that steel. Now I freehand so my new bevel is just a little bit convex which just add to the strength and I have them hair-popping sharp.
 
I would say 40 but I haven't needed to sharpen any of my ESEEs because I just got them last week!
 
Although I would love to hear from guys who sharpen their ESEEs 30 degrees inclusive - sharpness, edge retention, etc
 
I had my 3 @ 30 degrees for a while... Edge retention etc was still good... It will chip/ding/roll if you hit a rock tho... Now she is convexed.
