What do you use to restore a blade back to its original polish? I have a really nice knife which is made out of 1095. I use it from time to time as my EDC. I sliced an apple with it a while back ago and then my phone rung and then my boss called me in and one thing led to another and it wasn't until about 3 hours later that I was able to clean my blade. Now my blade is stained. It doesn't hurt the functionality obviously but, I liked it better when it was all bright and shiny. What would be best to try and restore its luster? Also, how do you store your 1095 knives for long term periods? cooking oil? Motor oil? Other type of oil?

You don't mention the finish on the blade. I would use mineral oil on any non stainless blade. It's safe with food. Its' better the olive and veg. oil IMO

Polishing pastes made for hardened steel will clean it up again. Flitz/Simichrome will both work.

For oiling, mineral oil is an easy solution, as suggested. So long as the blade is clean & dry before oiling, most any oil will work. The pharmaceutical grade mineral oil (USP) is food-safe as well, and is most often sold as a laxative at the grocery/drug store.
