How to convex a knife with coating

I want to learn to convex my knives and i have one im willing to use to practice on. I'm wondering how much coating should i expect to loose in the process and if there is a different way to convex coated blades so you don't take off too much coating. From my understanding you are almost laying the knife flat on the sand paper.
 
If you're just going to convex the edge you'll only expose a small portion of the blade, right where the edge "shoulder" is, in my experience. I've used wet/dry sandpaper, starting with 1000 grit, going to 1500 then 2000, backed with an old magazine or catalog, and I wet the sandpaper with oil like wd40 or CLP. I get mirror-polished convex edges this way.

if you're doing it by hand with sandpaper and mouse pad, just wrap the rest of the knife with duct tape or blue painter's masking tape and you should be protected from minor scuffs.
 
+1 on taping it up. just go above the shoulder a little bit with masking tape. i try to put tape on as evenly as possible on both sides. it helps out when keeping the edge even. you will need a soft pad. i have a method for convexing that works pretty well. if you want some help send me an email. rje196021@gmail.com
