How to get the etch off the surface?

Dear all,

I've been using fruit enzymes (something i experimented recently rather than vinegar) to clean the surface of my Salyan.
Initially the finishing was nice, with some seasoned stains on it, wiped clean & followed up by layers of silicone oil.
Then the spills became more deepening and this is what happened:

Would the acid eat into the steel itself? Anyway to assuage the problem?

Try Flitz, Simichrome, Brasso or Nev-R-Dull to clean and polish it off.
If it is too stubborn you might have to use some WD-40 or other light oil and some steel wool or a scotchbrite pad.
Yes, food acids will leave a patina and can eat into the steel if left unabated.
To assuage the problem, properly wash with soap and water after use, thoroughly dry and properly oil.

Jayinhk, i used enzymes off jeruk mangga. it's a solution i mistakenly left on the surface.
 
As Karda said, try using a polish to take the tarnish off. Something similar happened to my Jungle khuk: used it for opening coconuts and the blade tarnished. It came right off with a little Brasso.
