How To Properly Use a Bench Stone???

I learned on and have allways used a Smith's tri-hone Arkansas bench stone system. I have never had a problem sharpening and keeping sharp any knife I've came accross and several friends and coworkers allways ask me to sharpen their own knives for 'em (never any complaints and most say I get them sharper than they have ever seen them). Nobody ever really showed me how, as I'm pretty much self taught. So I'm simply wondering if I have the correct method???

Unless needing reground, I never use the course stone. So I use the med to rough the edge slightly then finsh with the fine stone till razor sharp. I push the blade running from handle to tip and roll adjust angle towards the tip.

The only real problem I have run into is when I want to reprofile an edge to a different angle. I kinda just guess at it and try to keep it consistant on both sides, I know its neer impossible this way to have exactly the same angle, but usually have it less than +/- 1* per side. I just never know what angle I'm sharpenning at.
 
So, does anyone have any advice to help me out, or am I allready doing the correct method???

Gee, it is hard to argue with success!

Questions:
Do you form and detect burrs as a guide indicating grinding progress?
If so, how do you remove the burr?
Do you use water or oil on the stones?

Answers:
1. Yes, I make sure there is a decent burr b4 flipping to the other side.
2. Don't know how to answer. I just sharpen the burr side till there is no resistance, letting me know the burr is gone. Then making 5 extra passes after that.
3. Oil (usually plain ol' cooking oil)
