How to reprofile?

I found this knife in my barn and i want to use it but the edge is all jacked up. I use Arkansas stones which aint the best for reprofiling. I was looking at the work sharp knife and tool which would be pretty good for what i am looking for because i have a few fixed blades i need to reprofile and i like convex but it is pretty expensive at the moment. any tips on on to reprofile good would be appreciated.

Something coarse, in the 120 - 400 grit range. There are tons of stones in that range to choose from that will do a good job of reprofiling. As for how to reprofile, grind away! Use a slightly higher (more obtuse) angle than you will use for your finishing stone (to avoid scratching above the bevel and to get past edge damage quicker). Work past all the chips, nicks, and rolls. Do a little deburring (don't go crazy with the deburring as you will move up in grit, anyway).
