How to Sharpen?

How does one go about sharpening a blade like JSP's that have a primary bevel that acts as the cutting edge. Do you have to angle the stone flush with the entire bevel? Thanks.
 
I know it is not of utmost importance, but wouldn't this completely scuff up the blade finish? After spending $800 + on a knife, the last thing I would want to do is use the primary bevel as an angle guide!

I am pretty sure on his flat ground blades, you only have the primary bevel, ie. grind starts at the spine and slopes to an edge, and that is it.
