How to tell blade steel of fightin rooster and bulldog?

Is there a way to tell the blade steel easily of solingin knives such as fightin rooster and bulldog brand knives? I find often times the resellers don't have a clue.
 
From the research I have done, most Solingen carbon steel is 1075, while their stainless is roughly the equivalent of 440B. Both usually in the 56-58 range for hardness.

Thanks for that. But is there any way to tell which it is from just photos of the knife?
 
Most of the time (though unfortunately not always) if it's not marked, it's carbon. Stainless blades are usually marked rostfrei or SS or stainless.
