I hunt with a fixed blade knife, 15" overall length, and 10" blade length. I use it for almost everything. Skinning an animal, sharpening a stick etc. I frequently sharpen my knife too. I was wondering what steel is best for this purpose? I heard that stainless steel is brittle and will easily break, yet probably 85% of knives I see are stainless steel.
