That is the factory edge in the video. I did just polish and strop the blade 10 minutes ago. Its really sharp now. I think it could decapitate 4 water bottles now....
I'm leaving the 25 degree edge on it for a while. I took my last SMF down to a 20 degree edge and it was scary sharp. For as thick as the the SMF blade is, it is a great slicer.
