I've seen some great items here and though its like comparing apples to tomatos, I still wanted to share. The carbon is mostly Dexter and pre-acquisition Russell while the SS is a mix of Sabatier, Henkells-Trident-Wustoff with a little Dick (F.Dick ham boner). I am frugal (cheap) and this selection cost considerably less than my Christmas SAK but I probably get more use out of the SAK. I believe I am prepared to carve the bird tomorrow.
