I think slip stones were originally designed (shaped) for use with woodworking tools (like the gouges used on a lathe, or other carving tools with curved/radiused edges). Most or all I've seen have a radiused edge, which would fit those tools perfectly.
And yes, they could easily be used on any other edged tool (like a knife). In fact, at least a few slip stones have a fairly large flat on them, like a regular stone, as well as a wide and narrow radiused edge. Great for serrations and recurves, too.
