I just received this model 583 Boning knife today and I'm stoked. My new wish is that Buck would duplicate this one with a smaller version and a larger one. They would be one, terrific set for the kitchen. I'm not in love with the color choice they used for the micarta, but the red liners are nice.

This thing is so sharp, when I did the arm hair shaving test with it, I managed to remove a small patch of skin along with the hair! :eek:

Here you go. It's not impressive, but I'll use it to store the knife in the drawer. It's too sharp to have it just rattling around in there, I could lose a finger if not carefull.



 
Thank you Sir for the pics of the sheath, one thing that stood out was the tang thickness, looks like a good 1/8 of an inch or so.
 
I measure it at .090", a tad less than 1/8', and that agrees with what the catalog says.
 
Thanks, it is a very nice looking knife and at a good price point online for $40.00 dollars. I think I will pick one up in the near future.

That red stripes between the blade and handles looks neat.:thumbup:

The micarta on it reminded me too much of the "scale" that sometimes formed on the delrin handled 300 series (there was a recent thread about that), so I tried something. Last night, I gave the handle a 15 minute or so soak in vegetable oil. I then washed it to remove the excess and dried it. It seems to have darkened the micarta to a more pleasing appearance (to my eyes at least). I don't know how long it'll last, but it was worth a try.

Esthetics aside, I love the knife so much that I ordered another one. The seller is out now, but when more are in stock, I'll get two more so I'll have a set of four to use as steak knives.
