I have 3 Emersons with the V-grind but the bevel only on side as per standard Emsersons.
Out of the box, they are sharp because the edge is pretty acute... I assume must be close to 30 degrees inclusive, albeit with narrow saber grind.
Is converting it a regular 17.5 or 20 degrees per side, on my Worksharp KO a good or bad idea? The saber grinds are relatively shallow so it's never going to be a deep slicer like my flat ground Spydercos.
I assume if I just grind the "flat" side I have already increased the inclusive bevel angle (bad) so I would also need to grind the original side as well. Am I understanding this correctly? I don't want to butcher a $200+ Emerson!
