I have pretty much cut up my leather strop

You could do either. If you replace it I would try to get the same thickness though for consistency. If you’ve just nicked it up I wouldn’t worry about it just keep using it.

You could just put the strop in a drawer some where and forget about it and just use stones.
The stones are capable of producing the sharpest most durable edge if you use them lightly and precisely.
