and then I get my latest issue of Tactical Knives and read about all the OTHER wonder knives that appear to be lawnmower blades with scales attached for HUNNERDS of bucks.

I like my Old Hickorys and wood handled Moras exactly because they reside on the other end of the continuum from "tacticool" stuff.
 
Old hickory butcher knives make excellent field knives imo they don't have the best edge retention but I've yet to see mine chip, They would make great additions to B.O.B bags.
 
My friend has a double-edged one he uses for cutting up fiberglass insulation. Seemed like a pretty decent knife to me.
