It wasn't always this way. I like all sorts of handle materials, ivory, bone, wood, titanium, carbon fiber, and even G-10 and micarta. Truth be told, stag was pretty low on my list of preferred handle materials. It was gnarly, bumpy, and inconsistent in texture and color. Sometimes it was dark, sometimes yellow, sometimes white. Sometimes it didn't even look like stag, but bone instead. The worst part of all was that the use of stag for handles increased the price of a knife. I just didn't see the appeal.
But something happened these past couple of years. Stag started growing on me. Seeing all the pictures posted here helped me to gain an appreciation for the so-called "imperfections" of a good piece of stag. I loved that each piece of stag was different. Where once I saw inconsistency I now saw uniqueness. Stag had become my preferred material.
One of the things I have on my wish list is a Randall carving set. I'll probably order it eventually, but the six-year waiting list has me a little hesitant. So I decided to try my luck at a little online market, and I found this Henkels carving set. Stag handles with carbon blade and fork. It's obviously been well-used, but that is of little consequence. I bought this set for one reason and one reason only, the stag. They don't offer handles like these on carving sets anymore, not unless you go custom. They won't get rid of my itch for a Randall set, but they'll keep me from scratching for a while.
