Makes a big difference in choosing a maker. If you want a hollow ground hunter out of D2 it's a lot different than a convex edged utility knife made from 1095.
i want more modern materials, havent decided on the steel, looking at one of the better sandviks, for instance better than the 12c, because i want it with me, at land or sea.
for handle materials probably g10, partially serrated, spearpoint, leg strap sheath, something like that.
try bryan breeden, he seems really open to trying new styles and giving the customer exactly what he is looking for. i don't know if he does serrations, but he might be up to try it.
i have BREEDEN making me a knife right now.i was under the impression that he has a few models and you can choose blade lengths,thicknesses,handle colors,liners and such.not sure if he does complete custom orders.he very well may.

you give him the specs and a crude drawing and he'll bring it to life and have it at your door in two weeks.i drew up a custom hatchet that he did for me.he can do anything.
....and since the ontario deal all he does now is customs.
