I need advice for a kitchen knife set for a sons wedding gift.

I want to get something nice but not over the top (shun) any suggestions? I would prefer to get pieces and then have my other son who is a wood worker make the block or a storage board.

Victorinox makes great chefs knives/santokus in the $40-50 range. Their paring knives work very well also for around $8-10. Get the fibrox handles, they're easy to clean. I'm prone to using these knives over our knives that were considerably more expensive.
 
Misono knives would be very nice as a wedding gift, the shuns are chippy in my experience.

the misono's are Japanese but have a very clean look, nice western style handles and a great blade geometry and overall fit and finish, The steel is very balanced too and they are not too expensive.

the most basic is the Misono "handmade" in an aus8 type steel at 58hrc

then the Misono "440" in a higher grade, aus10 type similar hardness

they don't reveal what the steel is but its a Moly/Vanadium type

finally the Misono "UX10" in a Swedish steel 19C27 at 59hrc
 
I'm a big fan of the Tojiro DP line. Very tough and good performing knives at excellent prices.
 
I have both Tojiro DP chef's and Shun Classic chef's. Both are fine knives. I use the Shun more because its belly is better for rocking chopping.
 
Shun has several lines. Can you be specific in how much you're wanting to spend? And what type of use will they get? I find that I like a knife with more of a curve vs a straight edge.

Not sure what "over the top (shun)" means? As another pointed out, shun has different model lines, and there are a bunch of more expensive brands out there.

How many knives are you looking to get? The basic 3 (chef's, slicing, and paring) or a full 7, 8, 12 piece set?

I just seen on the exchange here a 3 piece Benchmade Prestigedges set for sale, over $500 with no block.

Lower end you can look at the basic Victorinox, Henckles, Messermeister, Wustoff, or even Tramontina or Global if you're trying to go on the cheap?

An actual pricepoint would definitely help in gauging what to recommend.

For budget - Victorinox Fibrox, Wusthof Pro.

Would help if you specified a price range.
 
What's funny is that its a trade secret, no one knows, but given the price and hardness its not likely to be the 13c26, all we know is that its a Sandvik steel, it also doesn't sharpen as fast as the Takeyuki "grand chef" in AEB-L (60-61HRC) and cuts longer.

So best guess its the more wear resistant and expensive Sandvik 19c27 which is more similar to a 440c and Hitachi Gin N0.3 steel.

I have been hearing that knife blocks are beginning to take a backseat to magnetic wall mounts. It clears up counter space and you don't have problems with putting the knives away wet unless they are not stainless.
