I want to get something nice but not over the top (shun) any suggestions? I would prefer to get pieces and then have my other son who is a wood worker make the block or a storage board.
Misono knives would be very nice as a wedding gift, the shuns are chippy in my experience.
the misono's are Japanese but have a very clean look, nice western style handles and a great blade geometry and overall fit and finish, The steel is very balanced too and they are not too expensive.
the most basic is the Misono "handmade" in an aus8 type steel at 58hrc
then the Misono "440" in a higher grade, aus10 type similar hardness
they don't reveal what the steel is but its a Moly/Vanadium type
finally the Misono "UX10" in a Swedish steel 19C27 at 59hrc

I was under the impression that the UX10's were AEB-L/13C26.
