They are probably worth restoring, depending on condition. Both vintage no longer made knives.
The veggie knife is Azuma Katsuhiro 東　勝弘
The little deba is an Ibuki 伊吹. Because it is stamped Seki Magoroku 関孫六, it may be
an early Kai product.

I found the same knife (katsuhiro) for 26 euros, but the blade is damaged. Is there any information about the steel of the knife or the value? (Buying it anyway to make a project out of it)
