Probably that one, since there would be no other choice!

Seriously, though, I think I would freak if there was only one type of steel - different knives require different material properties.

CMP-3V sounds like I could live with it forever

I think I understand the question. If we could choose a steel to be the only one that we could use from now on, what would it be.
If that's the question, I'd go with 52100.

One steel? Of course, the Good Lord didn’t intend it that way, which is why we have so many wonderful steels and related alloys, with new possibilities every year, it seems. But it IS an interesting question. A certain "Fisk" (!) had this to say a few months back:

"I like 5160. I still use it on occasions. If a person had only one steel to make all his pieces I would use the 5160."

I would have to go with the CPM3V. It seems to me that it really has no drawbacks. Even corrosion resistance doesnt seem to be a problem, once it is heat treated. You can grind a blade much thinner with this stuff, and still have a very strong blade. And, it stays sharp for a LONNNGGG time.

5160 for sure. The other day I took one of the blades I am doing heat treat and tempering experiments on and pounded it thru a 1/2" bolt. Didn't chip or loose much of it's edge. Took another one and cut 1/2" X 8" strips of carboard for 3'it is still sharp
