For me it would be an FFG Endura 4. Thin, lightweight, easily disassembled, and perfect size (IMO). They are pretty cheap also (I got mine for $55 on the exchange.) VG10 is a good all around steel as well. I use mine daily for food prep, opening packages, and breaking down boxes. what would yours be?

I'd choose a Ti Military of some sort. Maybe a dealer exclusive with S90V and cf/Ti handle. Or the fluted Ti Military which I find to be of the utmost beauty.

My emotional choice would be a sprint run Military. Something with the new CQI changes in a stainless blade. So a 204P Military.

I love the Delica, no doubt about it. And, I am a huge Endura 4 fan. But, if I had only one to keep it would probably be a Military because of the blade shape and point. But it would be a tough call between that and the E4.
