I'm annoyed... can't get my Dalton Companion as sharp as my Timberline Mini Pitbull.

The Companion is ATS-34, the Pitbull is AUS 6. Does ATS-34 just take longer to sharpen? I've been working on it for quite some time with no noticable improvement, and in about 1/4 of the time my Pitbull is already sharper.

Yep. That's the drawback when you choose a steel with superior edge-holding ability, it's harder to resharpen (there are some exceptions, but this rule of thumb applies to most steels).
