I'm back! - Matching san mai kitchen knives
Santoku
9 3/4" blade in 1070/304 (stainless) with a 52100 core. 15 1/2" Total length. THIN for extreme slicing.
Guayacan wood handle. Hand made leather sheath.

Carving Knife
9 1/4" blade in 1010/1070 with a 52100 core. 14 1/2" Total length. THIN for extreme slicing.

Beautifull knife. So it combine cutting power of 52100 with resistance to corrosion of stainless steel.

Sorry I'll correct you, most likely it called Suminogashi - good monosteel layered between damascus sides. SanMai is ColdSteel trademark - another outcome of their creative marketing drons. It should be called Laminated blade or Waricomi or Clay, but not SanMai - it is for ColdSteel.

Well you learn something new everyday. I thought san mai was a Japanese term that Cold Steel "borrowed".
 
carver is my fave... love the ricaso and how it blends inot the handle, great job!
